Ingredients
  

  • 3 kg basmati rice boiled
  • 1 kg mutton
  • 1 cup curd
  • 1 no onion julienne
  • 2 no onion finely chopped
  • ¼ cup tomato puree
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • 1 ½ tsp kashmiri red chilly powder
  • 1 tsp garam masala powder
  • 2 tbsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp cumin powder
  • 5 no cloves
  • 3 no green cardamom
  • 5 no cinnamon sticks
  • 1 tbsp kewra water
  • 1 tsp Mint and coriander chopped
  • few saffron dry and water drops
  • 5 drop Rose water
  • 5 tbsp oil
  • Salt to taste
  • 5 no green chili chopped
  • 1 tbsp Chopped coriander to garnish

Instructions
 

  • Marinated the mutton pieces with hung curd, half of ginger, garlic paste and red chili powder
  • Heat oil in pan. Add cinnamon, cloves and green cardamoms and sauté for half a minute put chopped and julienne onion and fry till golden brown. Add ginger-garlic paste and fry again for about one minutes.
  • Add all the masala powder cook till oil separates from the masala. Now add mutton with the marinade paste and stir fry, till mutton turn into brown
  • then add sufficient amount of water and cook till almost tender add tomato gravy adjust seasoning. Cook for few minute . now gravy is medium thick in consistency. take out some gravy from the pan
  • Arrange a layer rice on the top of gray. Sprinkle half mint, coriander, kewra, rose water saffron, green chili chopped , garam masala powder, .
  • Arrange the remaining gravy followed by the remaining rice. then Cover with lid Cover the pan cook for while on very slow flame don t get burn
  • served hot with raita and onion salad

Notes

Mix it well serve with raita and salad
